Celery, onion, and raisins add nutrient-density and make this recipe more HEAL-icious!

Serves 6-8

  • 6 Tbsp butter 
  • 2 ribs celery, finely chopped
  • 1 yellow onion, finely chopped
  • ½ cup raisins (optional) **soak one to two hours in hot water until they plump up, then drain water** 
  • 2 cups water
  • 12 to 14 ounces store-bought stuffing mix, such as Stove Top (the exact amount will vary by brand)
  • aluminum foil

Instructions:

  1. Melt the butter in a 6-quart saucepan over medium heat.  Add the celery and onion and cook for 5 minutes or until tender-crisp, stirring occasionally.
  2. Add the water to the saucepan and heat to a boil.  Stir in raisins.
  3.  Add the stuffing, stir until moist, and remove from the heat. Place a cover on the pot and let sit for 5 minutes. 
  4. Fluff the stuffing mixture and spoon into a large baking dish. Cover the baking dish to keep it from drying out.
