Chicken with Salsa
(Serves 4)
This quick summer chicken dish is an excellent source of protein, potassium, niacin, vitamin B6, and monounsaturated fats.
Ingredients
- 4 boneless/skinless chicken breasts
- 1 avocado, diced
- 1 cup strawberries, chopped
- ½ cup red onion, chopped
- 2 tsp lime juice
Recipe Directions
- Rinse chicken breast and pat dry.
- Grill chicken in the oven or on the grill until chicken reaches 170º internal temperature (approximately 20-30 minutes).
- While chicken is cooking, mix avocado, strawberries and onions into a small bowl.
- Add lime juice to mixture, stir well and refrigerate.
- Place cooked chicken on top of cup rice (cooked), and put salsa on top
