Meatloaf

This meatloaf recipe paired with unsweetened applesauce is a balanced meal that contains food from all five food groups.

INGREDIENTS

Cooking spray
1 Tbsp olive oil
1 green bell pepper, diced
½ cup sweet onion, diced
½ tsp garlic, minced
1lb extra-lean (95%) ground beef
1 cup dry oatmeal
2 large eggs
¾ cup carrots, shredded
Salt and ground black pepper to taste
¼ cup ketchup or to taste

DIRECTIONS

Preheat oven to 400°. Spray a 9×5 inch loaf pan with cooking spray.
Heat olive oil in a skillet over medium heat; sauté bell pepper and onion until onion is transparent, about 5-10 minutes, then add garlic and cook until fragrant.
Combine ground beef, oatmeal, eggs, carrots, salt, pepper, bell pepper, onion and garlic in a large bowl. Mix well and press meat into the prepared loaf pan.
Bake in preheated oven until no longer pink, 35-40 minutes. (Internal temperature should be 160°)
Spread ketchup on top and cook 5 more minutes.
