Makes 12 cookies

Ingredients:

  • 2-3 overripe bananas
  • ½ cup peanut butter, or nut butter of choice
  • 1/3 cup honey
  • 2 ½ cups old-fashioned oats
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tsp cinnamon

Directions:

  1. Preheat oven to 350°F.
  2. Mash bananas in a bowl.
  3. Add peanut/nut butter, honey, and vanilla extract.
  4. Add in oats, salt, and cinnamon.
  5. Roll into 2 inch balls, place on a baking sheet lined with parchment paper.
  6. Bake for 15 minutes or until firm and lightly browned.
  7. Cool for 5 minutes before removing from the baking sheet.
