Breakfast Oatmeal Cookies
Makes 12 cookies
Ingredients:
- 2-3 overripe bananas
- ½ cup peanut butter, or nut butter of choice
- 1/3 cup honey
- 2 ½ cups old-fashioned oats
- 2 tsp vanilla extract
- 1/2 tsp salt
- 1 tsp cinnamon
Directions:
- Preheat oven to 350°F.
- Mash bananas in a bowl.
- Add peanut/nut butter, honey, and vanilla extract.
- Add in oats, salt, and cinnamon.
- Roll into 2 inch balls, place on a baking sheet lined with parchment paper.
- Bake for 15 minutes or until firm and lightly browned.
- Cool for 5 minutes before removing from the baking sheet.
