Broccoli Crunch Salad (about 4 servings)

Ingredients

  • 1 large head of broccoli, chopped (about 3 cups)
  • 1/4 cup sunflower seeds
  • 1/4 cup raisins
  • 1/4 cup shredded carrots (optional for extra color)

For the dressing

  • 1/2 cup plain Greek yogurt
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon lemon juice
  • Pinch of salt
  • Pinch of black pepper

Directions
In a large bowl, combine the broccoli, sunflower seeds, raisins, and shredded carrots if using. In a small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, lemon juice, salt, and pepper until smooth. Pour the dressing over the broccoli mixture and toss until well coated. Chill for 20 to 30 minutes before serving.
