Bunny Bread Bunny Bread

With whole wheat flour and grated carrots, this tasty bread is a nutritious way to start your day. Carrots provide vitamin A that promotes healthy eyes.

Ingredients:

  • 1/2 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1 egg
  • 1/3 cup canola oil
  • 1/3 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup grated carrot
  • 1/3 cup raisins, soaked in warm water

Directions:

  1.  Grease and flour a loaf pan.
  2. Preheat oven to 325°F.
  3. In a medium bowl, whisk the dry ingredients.
  4. In a large bowl, whisk together wet ingredients.
  5. Add dry ingredients to wet ingredients and beat until combined.
  6. Stir in carrots and raisins.
  7. Pour batter into pan.
  8. Bake for 50-60 minutes, until knife comes out clean.
  9. Remove from oven and cool for 10 minutes.
