Chicken Salad Sandwich
Serves: Approx 8 chicken salad sandwiches.
4 cups left over finely chopped chicken meat
1.5 cups Mayonnaise
1 lemon juiced
1 tbsp Dijon mustard
1 cup finely diced celery
1 tbsp chopped tarragon (optional)
1 tbsp chopped flat leaf parsley (optional)
Salt and pepper to taste
Whole grain bread
Combine all ingredients into a mixing bowl and mix thoroughly. Store in an airtight plastic container in fridge for no more than 5 days.
