Chicken with Salsa 

(Serves 4)

This quick summer chicken dish is an excellent source of protein, potassium, niacin, vitamin B6, and monounsaturated fats. 

Ingredients

  • 4 boneless/skinless chicken breasts
  • 1 avocado, diced 
  • 1 cup strawberries, chopped
  • ½ cup red onion, chopped
  • 2 tsp lime juice

Recipe Directions

  1. Rinse chicken breast and pat dry. 
  2. Grill chicken in the oven or on the grill until chicken reaches 170º internal temperature (approximately 20-30 minutes).
  3. While chicken is cooking, mix avocado, strawberries and onions into a small bowl.
  4. Add lime juice to mixture, stir well and refrigerate. 
  5. Place cooked chicken on top of cup rice (cooked), and put salsa on top
