Fish Tacos with Cabbage Slaw

Ingredients for Cabbage Slaw
- 3 cups of pre-shredded slaw
- 1 cup chopped plum tomatoes
- ⅓ cup thinly sliced green onions
- ½ cup chopped cilantro
- 2 tablespoons fresh lime juice
- 1 teaspoon olive oil
- ¼ teaspoon salt
Ingredients for Fish
- 1 lb. tilapia or white fish (fresh or frozen)
- 1 teaspoon chili powder
- ¼ teaspoon salt
- 2 teaspoons olive oil
- Small corn or whole wheat tortillas
Recipe Directions
- Cabbage Slaw: toss all ingredients in large bowl, cover, and refrigerate until ready to serve.
- Fish: heat the olive oil in a large skillet over medium high heat. Sprinkle the fish with chili powder and salt and add the fish to the pan. Cook each side for about three minutes, flipping with a spatula, until fish can be flaked with a fork.
- Once cooked, remove the fish from heat and cut into bite size pieces.
- Assemble tacos – place fish on the tortillas first and top with the cabbage slaw.
