Fish Tacos with Cabbage Slaw

Ingredients for Cabbage Slaw

  • 3 cups of pre-shredded slaw
  • 1 cup chopped plum tomatoes 
  • ⅓ cup thinly sliced green onions
  • ½ cup chopped cilantro
  • 2 tablespoons fresh lime juice 
  • 1 teaspoon olive oil
  • ¼ teaspoon salt 

Ingredients for Fish

  • 1 lb. tilapia or white fish (fresh or frozen)
  • 1 teaspoon chili powder
  • ¼ teaspoon salt 
  • 2 teaspoons olive oil
  • Small corn or whole wheat tortillas 

Recipe Directions

  1. Cabbage Slaw: toss all ingredients in large bowl, cover, and refrigerate until ready to serve. 
  2. Fish: heat the olive oil in a large skillet over medium high heat. Sprinkle the fish with chili powder and salt and add the fish to the pan. Cook each side for about three minutes, flipping with a spatula, until fish can be flaked with a fork. 
  3. Once cooked, remove the fish from heat and cut into bite size pieces. 
  4. Assemble tacos – place fish on the tortillas first and top with the cabbage slaw.
