Brain Boosting French Toast Casserole
This delicious and deliciously easy breakfast casserole is sure to please a crowd.
Makes about 9 servings
Ingredients:
- 12 slices stale whole wheat bread, cubed
- 2 ripe bananas
- 1 cup 2% milk
- 6 large eggs
- 2 Tbsp syrup of choice
- 1 tsp vanilla extract – pantry item
- 1/4 tsp salt – pantry item
- 2 tsp cinnamon – pantry item
- 1 (16-oz.) package frozen mixed berries
Topping:
- ½ cup chopped walnuts
- 2 Tbsp light brown sugar
- 2 Tbsp cubed, cold unsalted butter
Directions:
- Â Coat 13 x 9 inch glass baking dish with cooking spray.
- Mash banana with a fork in a large bowl and whisk in milk, eggs, syrup, vanilla, salt, and cinnamon until well mixed.
- Fill baking dish with bread and toss in liquid mixture until bread is well coated.
- Sprinkle berries over mixture.
- Let sit for 30 minutes or overnight, covered.
- Combine walnuts, sugar, and cubed butter in a bowl.
- Sprinkle topping over bread mixture, cover, and bake at 375°F for 35 minutes.
- Remove cover and bake 5 minutes until crunchy.
- Let stand at room temperature and serve with a dollop of yogurt (optional)
