French Toast Casserole

Brain Boosting French Toast Casserole

This delicious and deliciously easy breakfast casserole is sure to please a crowd.

Makes about 9 servings

Ingredients:

  • 12 slices stale whole wheat bread, cubed
  • 2 ripe bananas
  • 1 cup 2% milk
  • 6 large eggs
  • 2 Tbsp syrup of choice
  • 1 tsp vanilla extract – pantry item
  • 1/4 tsp salt – pantry item
  • 2 tsp cinnamon – pantry item
  • 1 (16-oz.) package frozen mixed berries

Topping:

  • ½ cup chopped walnuts
  • 2 Tbsp light brown sugar
  • 2 Tbsp cubed, cold unsalted butter

 

Directions:

  1.  Coat 13 x 9 inch glass baking dish with cooking spray.
  2. Mash banana with a fork in a large bowl and whisk in milk, eggs, syrup, vanilla, salt, and cinnamon until well mixed.
  3. Fill baking dish with bread and toss in liquid mixture until bread is well coated.
  4. Sprinkle berries over mixture.
  5. Let sit for 30 minutes or overnight, covered.
  6. Combine walnuts, sugar, and cubed butter in a bowl.
  7. Sprinkle topping over bread mixture, cover, and bake at 375°F for 35 minutes.
  8. Remove cover and bake 5 minutes until crunchy.
  9. Let stand at room temperature and serve with a dollop of yogurt (optional)
