French Toast with Berries French Toast with Mixed Berry Syrup

This recipe provides some antioxidants and omega-3 fatty acids to add to your breakfast. Have two pieces of French toast with this mixed berry syrup for a nutritious breakfast!

Ingredients:

Berry Syrup:

  • 2 cups mixed berries (fresh or frozen with no added sugar) – 140 cal
  • ¼ cup water
  • 1 Tbsp brown sugar – 52 cal

French Toast:

  • Whole wheat bread (8 slices)
  • 2 eggs
  • ⅔ cup fat-free milk
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • ¼ cup chopped walnuts

Directions:

Berry Syrup:

  • Pour berries, water, and brown sugar into a saucepan
  • Heat over medium-high heat
  • Smash berries with a wooden spoon when soft
  • Serve warm over french toast or cool and store in the refrigerator

French Toast:

  • Whisk 2 eggs in a large bowl
  • Stir in milk, cinnamon, and vanilla extract
  • Dip bread slices in wet mixture, evenly coating both sides
  • Cook on greased skillet until lightly browned on both sides
  • Top with syrup and chopped walnuts, and enjoy!
