French Toast with Mixed Berry Syrup
This recipe provides some antioxidants and omega-3 fatty acids to add to your breakfast. Have two pieces of French toast with this mixed berry syrup for a nutritious breakfast!
Ingredients:
Berry Syrup:
- 2 cups mixed berries (fresh or frozen with no added sugar) – 140 cal
- ¼ cup water
- 1 Tbsp brown sugar – 52 cal
French Toast:
- Whole wheat bread (8 slices)
- 2 eggs
- ⅔ cup fat-free milk
- ½ tsp cinnamon
- 1 tsp vanilla extract
- ¼ cup chopped walnuts
Directions:
Berry Syrup:
- Pour berries, water, and brown sugar into a saucepan
- Heat over medium-high heat
- Smash berries with a wooden spoon when soft
- Serve warm over french toast or cool and store in the refrigerator
French Toast:
- Whisk 2 eggs in a large bowl
- Stir in milk, cinnamon, and vanilla extract
- Dip bread slices in wet mixture, evenly coating both sides
- Cook on greased skillet until lightly browned on both sides
- Top with syrup and chopped walnuts, and enjoy!
