Ground Turkey & Vegetable Meatloaf

Serve with roasted sweet potatoes and green beans for a HEAL healthy dinner!

 

Ingredients

  • Cooking spray
  • 1 pound lean ground turkey (or lean ground beef)
  • ½ of a yellow onion, diced
  • ½ c. zucchini, shredded 
  • ½ c. carrots, shredded
  • ½ c. old fashioned oats
  • ¾ c. salsa
  • Knorr Vegetable Mix (1 package; 1.4 ounces)
  • 3 egg whites
  • Pepper to taste

 

Recipe Directions

  1. Preheat oven to 350º. Spray a 9×5 loaf pan with cooking spray. 
  2. In a large bowl combine all ingredients and mix with your hands. 
  3. Pour the mixture into the loaf pan and gently press down until it is even. 
  4. Bake for 60-65 minutes or until the juices run clear.
