HEAL Caviar 

(Makes 11 servings) 

Ingredients 

  • 1-15 oz. can black beans, drained and rinsed
  • 1-15 oz. can chickpeas/garbanzo beans, drained and rinsed
  • 1-15 oz. can sweet corn, drained
  • 1 lb. diced roma tomatoes (around 6 tomatoes)
  • ½ cup chopped red bell pepper
  • ½ cup chopped green bell pepper
  • 1 cup chopped red onion
  • ½ cup chopped cilantro (optional)
  • 1  avocado (optional)

Dressing Ingredients

  • ⅓ cup olive oil 
  • 1 tsp sugar
  • 2 Tbsp red wine vinegar
  • 2 Tbsp lime juice (around 2 limes)
  • ½ tsp salt 
  • 1 tsp chili powder

Recipe Directions

  1. Whisk dressing ingredients together in a small bowl.
  2. Add beans, chickpeas, corn, tomatoes, peppers and onion into a large bowl.
  3. Pour dressing over ingredients and mix. Stir in cilantro and avocado if desired.
  4. Cover and chill at least 1 hour or overnight. 
  5. Serve chilled or at room temperature
