Mashed Potatoes with Caramelized Onions
Jazz up this holiday staple by adding sweet, caramelized onions to creamy mashed potatoes. The flavor is irresistible! Potatoes are high in vitamin A, potassium, and fiber, and are very rich in antioxidants!
Serves 6 – 8
- 4 pounds potatoes (Russet preferred)
- ¼ cup butter (divided)
- 1 to 2 cups milk – added gradually (you may need to add a little more or less to get your preferred consistency)
- Salt and pepper to taste
- 1 medium sweet onion – thinly sliced
Instructions:
- Peel and cut potatoes into quarters lengthwise. Remove any spots, lumps, or knots.
- Place potatoes in a large pot (6-quart) and cover with cold, salted water (the water-line should be about an inch above potatoes). Bring to a boil, reduce heat down to medium-low and allow to simmer until fork tender (about 15-20 minutes).
- While potatoes are boiling, heat 2 Tbsp of butter in a medium-sized skillet and saute onions until they are golden brown.Â
- Once the potatoes are tender, drain the water, in the same pot, warm 2 Tbsp of butter and 1 cup milk over low heat. Using a potato masher or electric beater, slowly mash the potato mixture, adding more milk as needed until potatoes are mostly smooth. Add in onions and whip until the potatoes are creamy.Â
- Season with salt and pepper to taste.
