No Meat Tacos No Bean Meat Tacos

Beans and corn make a complete protein and one of these tacos provides 8 grams of protein! Add some salsa to one taco and pair with a favorite fruit or vegetable for a complete meal.

Makes 8 tacos

Ingredients:

  • 1 onion, small and chopped
  • 2 tsp vegetable oil
  • 1 15-oz. can black beans, drained and rinsed
  • 1 15-oz. can corn, drained and rinsed
  • 8 corn taco shells
  • 1/4 head of lettuce chopped
  • 2 tomatoes, chopped
  • 1 cup cheese, shredded
  • Taco sauce (optional)
  • Salt and pepper to taste

Directions:

  1. Sauté chopped onions in vegetable oil.
  2. Sprinkle in a corn taco shell.
  3. Add beans, corn, lettuce, tomatoes, and cheese.
