No Bean Meat Tacos
Beans and corn make a complete protein and one of these tacos provides 8 grams of protein! Add some salsa to one taco and pair with a favorite fruit or vegetable for a complete meal.
Makes 8 tacos
Ingredients:
- 1 onion, small and chopped
- 2 tsp vegetable oil
- 1 15-oz. can black beans, drained and rinsed
- 1 15-oz. can corn, drained and rinsed
- 8 corn taco shells
- 1/4 head of lettuce chopped
- 2 tomatoes, chopped
- 1 cup cheese, shredded
- Taco sauce (optional)
- Salt and pepper to taste
Directions:
- Sauté chopped onions in vegetable oil.
- Sprinkle in a corn taco shell.
- Add beans, corn, lettuce, tomatoes, and cheese.
