INGREDIENTS
1 lb chicken breast, cubed
3 Tbsp oil, for frying
Pepper, to taste
1 lb broccoli florets (frozen work, too)
8 ounces of carrots, sliced thin
SAUCE
2 Tbsp garlic, minced
2 tsp sesame oil
½ cup reduced sodium soy sauce (can get gluten free if needed)
1 Tbsp brown sugar
½ cup water
¼ cup flour (or cornstarch to make gluten free)
DIRECTIONS
In a large pan on medium-high heat, add 1 Tbsp of oil. Once the oil is hot, add chicken season with pepper, and sauté until cooked through and browned. Remove chicken from pan and set aside.
In the same pan, heat oil and add carrots. When the carrots start to soften, add broccoli and stir-fry until the broccoli is tender. Remove carrots and broccoli and set aside.
Add 1 Tbsp of oil to the pan and sauté garlic until fragrant. Add the remaining sauce ingredients and stir.
Return the chicken and vegetables to the sauce, stir until heated through.
Serve with hot rice or noodles.
