Pick Your Protein Chili
Try out this homey, warm chili to fight off the November chill. This quick meal provides heart benefiting fiber that may help lower cholesterol. Feel free to pick beans based on preference. Makes 10 servings.
INGREDIENTS
½ yellow onion, chopped
1 bell pepper, chopped (color of choice)
1 can kidney beans, drained
1 can navy beans or chickpeas, drained
2 cans diced tomatoes (no salt added)
1 cup vegetable broth
Protein (options can include 1lb ground beef or turkey, 1 cup of quinoa, 2 chicken breasts shredded, or 1 cup lentils based off of preference)
Sour cream (for topping)
Cheese (for topping)
DIRECTIONS
Sauté onion and pepper in large pot until onion is translucent and pepper is slightly soft.
Add kidney beans, navy beans, chickpeas and both cans of tomatoes and vegetable broth. Let simmer for 10 minutes.
Cook protein according to package directions.
Add protein and continue to simmer on medium-low heat for 10 minutes.
Serve with cheese.
