Pork Chops with Sautéed Apples

Rich in protein, niacin, and vitamins C and B6, this recipe is great for building muscles. 

Ingredients

  • 1 Tbsp oil (canola or vegetable)
  • ½ tsp salt 
  • ½ tsp pepper
  • 4-4 oz. boneless fresh pork chops
  • 2 Tbsp butter, divided
  • 1 large red apple with skin, sliced
  • ¾ cup chicken broth
  • 3 Tbsp maple syrup 
  • 6 tsp Dijon mustard 

Recipe Directions

  1. Heat a large skillet over medium-high heat. Add 1 Tbsp oil and swirl to coat.
  2. Sprinkle pork with salt and pepper. Add to pan. Cook until internal temperature is 180º (about 3-5 minutes on each side). Set chops aside. 
  3. Add 1 Tbsp butter and apple slices to pan; sauté for 2 minutes. Add chicken broth and bring mixture to a boil. Stir in ⅛ tsp salt, remain 1 Tbsp butter, syrup and Dijon mustard. Cook for 1-2 minutes. 
  4. Divide chops among 4 plates and top evenly with apple mixture.
