Mexican-Inspired Rice and Beans Soup
This quick and easy soup is a great weeknight dinner that’s as budget-friendly as it is tasty.
Serves 6
Taco Soup:
- 1 ½ cup rice
- 1 can of corn
- 1 can of black beans
- 1 can of dark kidney beans –
- 1 can of tomatoes
- 1 green bell pepper
- 1 package of taco seasoning
- 1 bag of frozen spinach
Instructions:
Cook rice according to instructions on the bag. Add the next 6 ingredients in a large pot and heat over medium-high heat. Once heated through, add frozen spinach and cooked rice. Stir well and serve with cheese and/or tortilla chips.
