Roasted Carrots Roasted Carrots

Carrots provide vitamin A that promotes healthy eyes and skin. Pair this recipe with lean meat and whole grains for a complete and nutritious lunch or dinner.

Makes 6 servings

Ingredients:

  • 14 oz. carrots
  • 1 medium yellow onion, sliced
  • 2 Tbsp olive oil
  • 3 Tbsp parsley
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ¼ tsp salt
  • ½ tsp black pepper

Directions:

  • Slice carrots into 3-inch slices
  • Cut onion in half and cut into thin slices
  • Spread carrots and onions slices on a lined baking sheet
  • Add olive oil and the remaining seasonings
  • Toss all to combine and bake at 400°F for 15-20 minutes until carrots are tender
