 Roasted Carrots
Carrots provide vitamin A that promotes healthy eyes and skin. Pair this recipe with lean meat and whole grains for a complete and nutritious lunch or dinner.
Makes 6 servings
Ingredients:
- 14 oz. carrots
- 1 medium yellow onion, sliced
- 2 Tbsp olive oil
- 3 Tbsp parsley
- 1 tsp garlic powder
- 1 tsp paprika
- ¼ tsp salt
- ½ tsp black pepper
Directions:
- Slice carrots into 3-inch slices
- Cut onion in half and cut into thin slices
- Spread carrots and onions slices on a lined baking sheet
- Add olive oil and the remaining seasonings
- Toss all to combine and bake at 400°F for 15-20 minutes until carrots are tender
