Soup stockSoup Stock

Use leftover turkey or chicken bones to made homemade soup stock that’s both healthier and tastier than store bought. This surprisingly easy recipe can be made on the stove top, or in a slow cooker.

  • Bones from a roasted turkey or chicken, with extra meat removed 
  • 1 medium onion, quartered 
  • 2 fresh or 1 dry bay leaf 
  • 3-5 sprigs of thyme 
  • 2 – 3 carrots, coarsely cut 
  • 3 stalks celery, coarsely cut

Instructions:

  1. Place the intact bones in a stockpot along with a quartered onion, a bay leaf, carrots, and celery. Cover with cold water (about a gallon), bring to a boil, then lower the heat and simmer for 3 hours.  Alternatively, place ingredients in a slow cooker and set on low for 6-8 hours.
  2. Remove the bones and discard. Meanwhile, strain the broth, rinse out the pot, and return the broth to the pot. You should have between 2 and 3 quarts of broth.
