Sweet Potato Bowl
This delicious high-protein meal for two can easily be scaled up to feed a family.
Serves 2
- 1 cup of cooked rice
- 2 sweet potatoes, diced
- 2 tbsp olive oil
- 1 can of black beans, rinsed and drained
- 2 green bell peppers, diced
- 2 Roma tomatoes, diced
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp light sour cream
- Chili powder, cumin, red pepper flakes, etc. (optional)
Instructions:
Chop sweet potatoes into bite-size pieces, drizzle with olive oil and roast in the oven at 400°F for about 20 minutes, or until tender. Remove from oven and add black beans, green pepper, and tomato to sweet potato pieces. Toss with salt and pepper and optional seasonings. Build bowl with rice, vegetable mixture, and a dollop of sour cream
