Turkey Taco Bowl
Ingredients
– 3 Cloves Chopped Garlic
– 1 Fine Chopped Yellow Onion
– 1 Chopped Green Bell Pepper
– 1 Chopped Red Bell Pepper
– Small Can Low Sodium Tomato Sauce
– 2 Tbs Chopped Cilantro
– 2 Cups Sliced Lettuce
– 1 Cup Chopped Fresh Tomato
– 1 Diced Jalapeno Pepper
– 1 Fresh Avocado
– Lime Juice
– 1 Fine Chopped Pineapple
– 2 # Lean Ground Turkey
– Black Beans
– 1 Cup Shredded Cheese
– 1 Cup Yogurt
– 1 Tbsp Garlic Powder
– 1 Tbsp Chili Powder
– 1 Tsp Cumin
– 1.5 Tbsp Paprika
– 1 Tsp Cayenne Pepper
– 2 Tsp Salt and Pepper
– 4 Tbsp Lite Olive Oil
– Whole Grain Tortilla
RECIPE DIRECTIONS
1) Med.-Large Sauté Pan, add 2 Tbs olive oil on med heat, add turkey meat, use spatula to break-up the meat and stir until fully cooked (about 7-10 minutes). Remove meat from pan and drain.
2) To the same pan, add remaining olive oil, add onions, garlic, (peppers-optional), sauté for 5-7 minutes until soft. Add all seasoning, add the cooked turkey meat to pan and mix all ingredients well (except the lime juice & cilantro).
3) Add the tomato sauce, and water to pan with the turkey and cover. Simmer for 20-25 minutes. Add the lime juice & cilantro.
4) Add your choice of toppings from the ingredient list: lettuce, tomatoes, jalapenos, avocado, cheese, yogurt, and pineapple. Remember, incorporating a variety of nutrients from various food groups supports multiple body functions.
5) Serve with whole grain flour tortilla chips.
6) Enjoy a delicious meal with family and friends.
*Smart Substitutions: For a vegetarian option, remove the turkey and increase the black beans as a lean protein source.
