Veggie Pizza with Cauliflower Crust

(Makes 4 servings)

 

Cauliflower Crust Ingredients

  • 1 large head cauliflower
  • 4 egg whites
  • ¼ cup shredded, fat free mozzarella cheese
  • ¼ cup reduced fat parmesan cheese
  • ¼ tsp garlic powder

Sauce Ingredients

  • No-salt added tomato sauce 

Vegetable Topping Options (choose 3 or more)

  • Broccoli
  • Tomatoes
  • Bell peppers
  • Onions
  • Asparagus 
  • Banana pepper
  • Mushrooms
  • Spinach 

Recipe Directions

  1. Preheat oven to 450º. Line 2 baking sheets with parchment paper and coat them with cooking spray. 
  2. Trim and discard the leaves from cauliflower. Finely chop the cauliflower florets until it resembles short-grain rice. 
  3. Measure out 4 cups of the cauliflower and transfer to a medium bowl. Into the bowl, add egg whites, mozzarella cheese, parmesan, garlic powder and black pepper. Stir to combine. 
  4. Divide the cauliflower mixture over the 2 prepared baking sheets. Aim for each pizza to be 7-8 inch circles, using a knife or spatula to spread the mixture into this size. 
  5. Bake cauliflower crust in the oven for about 30 minutes. Remove from oven. 
  6. Reduce oven to 425º. 
  7. Combine all vegetable toppings in a small nonstick pan over medium to high heat. Add cooking oil. Cook until softened or about 5 minutes. 
  8. When the cauliflower crusts are finished, divide tomato sauce between each pizza, spreading it across the whole pizza. Top with cooked vegetables and cheese. Bake in oven until cheese melts or for about 5-7 minutes. 
  9. Remove pizza from oven. Use large spatula to carefully remove pizza from parchment and transfer to each plate. Cut each one into quarters and serve.
