White Chicken Chili
(Makes 8 Servings)
This quick meal provides heart benefitting fiber that may help lower cholesterol, and folate and iron also help to reduce anemia by improving blood nutrients.
Ingredients
- 4 cups cooked chicken breast (for a quick recipe use a precooked rotisserie chicken)
- 1-16 oz. container of salsa (fresh is best, but can also use jar salsa)
- 4 cans of white beans (no salt added)
- 32 oz. low-fat chicken broth (low sodium)
- 2-3 Tbsp grated cheese (cheddar or 3 cheese variety)
Recipe Directions
- Combine all ingredients by chicken and cheese in large pot.
- Do not drain beans – add liquid from beans to cooking pot.
- Heat until boiling. Add chicken. Cover and simmer for at least 30 minutes.
- Top with cheese when serving.
