Turkey Noodle Soup
If you’re in the mood for some healthy comfort food or crave a warm meal, then soup may be precisely what you need. This Turkey Soup is a great way to use leftovers and ensure your family gets all their vegetables and nutrition in a one-pot meal.
Serves 6 – 8
- 8 cups turkey stock or low-sodium chicken broth
- 3 carrots, peeled and chopped
- 2 ribs celery, chopped
- 1 onion, chopped
- 2 Tbsp fresh thyme, plucked and chopped or 1 ½ tsp dried thyme
- 8 ounces wide egg noodles, or other dried pasta
- 2 Tbsp Better-than-Bouillon chicken base or 1 Tbsp poultry seasoning
- 2 Tbsp chopped fresh parsley or 1 Tbsp dried parsley
- 1½ cups cooked turkey meat, diced (leftover turkey)
- Salt, to taste (kosher salt is ideal)
- Pepper, to taste
Instructions:
- Bring turkey stock or chicken broth to a boil in a large pot, then add the carrots, celery, onion, and thyme. Simmer until the carrots are tender but not yet soft – about 2 minutes.
- Stir in Bouillon or poultry seasoning.
- Add the noodles and cook until al dente, according to the package instructions.
- Add the turkey meat and simmer just until it is heated through.
- Season with salt and pepper to taste.
- Serve right away in bowls garnished with the chopped parsley. Enjoy.
