Turkey noodle soupTurkey Noodle Soup

If you’re in the mood for some healthy comfort food or crave a warm meal, then soup may be precisely what you need. This Turkey Soup is a great way to use leftovers and ensure your family gets all their vegetables and nutrition in a one-pot meal.

Serves 6 – 8

  • 8 cups turkey stock or low-sodium chicken broth
  • 3 carrots, peeled and chopped
  • 2 ribs celery, chopped
  • 1 onion, chopped
  • 2 Tbsp fresh thyme, plucked and chopped or 1 ½ tsp dried thyme
  • 8 ounces wide egg noodles, or other dried pasta
  • 2 Tbsp Better-than-Bouillon chicken base or 1 Tbsp poultry seasoning 
  • 2 Tbsp chopped fresh parsley or 1 Tbsp dried parsley
  • 1½ cups cooked turkey meat, diced (leftover turkey)
  • Salt, to taste (kosher salt is ideal)
  • Pepper, to taste

Instructions:

  1. Bring turkey stock or chicken broth to a boil in a large pot, then add the carrots, celery, onion, and thyme. Simmer until the carrots are tender but not yet soft – about 2 minutes. 
  2. Stir in Bouillon or poultry seasoning. 
  3. Add the noodles and cook until al dente, according to the package instructions. 
  4. Add the turkey meat and simmer just until it is heated through. 
  5. Season with salt and pepper to taste. 
  6. Serve right away in bowls garnished with the chopped parsley. Enjoy.
